Thanks for the email, we use organic rice malt as a binding agent for our bars as it is low-gi and free of fructose. 


We are governed by the fact that we use natural ingredients, it would be easy to radically lower the sugar content if we used artificial chemicals and sweeteners which we were not prepared to do.


Common binding ingredients for muesli and snack bars include honey and fruit syrup. We wrote a post about our thoughts on these below which will help you understand a little more about fructose:
